Bullock Knocks out Farnum's Teeth

Hearst provokes Bullock with several clever lines, one about affairs, who cannot direct his anger and pulls Farnum over the counter throws him down and knocks his teeth out, pretty viscous beating.   "Call the Law!"  "Sheriff's killing the Mayor"

Bullock fights Swearengen

Swearengen baits Bullock into a fight by insulting the widow Garret. Fight starts at 20:20.  Smile of child saves Bullock's life.  Funniest line here is "Wave a penny under the Jew's nose.  They've got living breath in them, brings them right around."

Dan fights Captain Turner

Hearst sets up a fight between his man and Swearegen's.  This has to be the most memorable fight scene in the whole series but not my favorite.  If you don't want any setup start watching at 22:34.  Al gives the go ahead and Dan greases up.  Hearst reminds the Captain to make "an object lesson" out of it.  The fight last a full five minutes.  Enjoy

Charlie Utter Kicks the Shit of Wolcott

At 10:18 into the Season 2 Episode 7 titled "E.B. Was Left Out" Charlie Utter waits in line behind Wolcott and says "Mind where you stomp your fucking feet." Charlie's fuming with anger about Wolcott's murder of Joanie's whores but is sworn to secrecy by Joanie.  Utter picks a fight with Wolcott.  "Why you think I believe you're a fucking cunt?" "I am good at first impressions and you are a fucking cunt!"  Utter throws him into the thoroughfare and kicks the shit out of Wolcott until Bullock pulls him away.  Swearengen and his boys speculate about the cause of the fight.  To Bullock Utter explains "Cocksucker stepped on my toe."

I love the way Utter spits the word cunt at wolcott, reminiscent of Wild Bill Hickcock's tirade during the cardgame, which is the best usage of the word in any movie or TV series ever!
